German Sage Mead

"A wine is also made of only water and honey. For this it is recommended that rain-water should be stored for five years. Some who are more expert use rain-water as soon as it has fallen, boiling it down to a third of the quantity and adding one part of old honey to three parts of water, and then keeping the mixture in the sun for 40 days after the rising of the Dog-star. Others pour it off after nine days and then cork it up. This beverage is called in Greek ‘water-honey’ [‘hydromeli’]; with age it attains the flavour of wine." [1]

This brief paper is not to prove that mead was available in the SCA time period, for we have plenty of documentation that it did. I will not take up the reader's time with the many pages required to document the history of fermented honey. I will, instead, concentrate on one particular recipe from Ein Buch von guter spise: [2]

Yakisoba Noodle Stir Fry Recipe and Japanese Word of the Month

This marks the first of a new feature: Japanese Culture and Word of the Month by Lord Hidetoro  Shigamitsu

Easy Yakisoba Noodle Stir Fry

Prep time (roughly) 5 mins
Cook time 10 mins
Total time 15 mins

2 (5.6 ounce) packages of yakisoba noodles* (Udon noodles are ok to)
¼ cup soy sauce
1 Tablespoon white sugar
⅛ teaspoon red pepper flakes
¼ cup rice vinegar
¼ cup water or broth (I prefer chicken broth)
1 Tablespoon vegetable oil
1 small onion, vertically sliced
1 cup shredded cabbage
2 scallions, chopped

Follow package instructions to heat and separate noodles. Combine the soy sauce, sugar, red pepper flakes, vinegar, and water in a small bowl and whisk to combine. Heat the vegetable oil in a large saute pan or wok set over medium-high heat. Add the sliced onions and stir fry for 1 minute. Add the cabbage and cook for another 2 minutes until softened. Add the prepared yakisoba (or Udon) noodles and toss well. Pour the sauce into the pan and toss to coat the noodles. Stir fry for 3 to 4 minutes until heated through. Turn off the heat and add the scallions. Serve hot.

The Kingdom of Ealdormere will be seen in the premiere episode of TVOntario’s new kids program “The Mystery Files”.

The episode airs Thursday, January 21 on your local TVO channel at 6:30 pm.

“How do countries decide who's in charge? E.B. goes to a medieval re-enactment camp to see first-hand how medieval kings seized power and ruled with absolute authority. Position Available: Tournaments Illuminated Art Director

The Society for Creative Anachronism (SCA) is seeking candidates for the position of Tournaments Illuminated Art Director.  The current officer steps down in July 2016, and in order to ensure a smooth transition, applications for the positions are now being accepted. 

Tournaments Illuminated (TI) is the Society's quarterly magazine that furthers research, education and 'living history' recreation in the field of pre-seventeenth century Western culture, with additional features unique to the SCA: humor, kingdom news, medieval travel destinations, museums of interest, and more. 

Duties and responsibilities of the Art Director include:
  • layout of the magazine while adhering to our graphic standards on schedule
  • maintaining contact with illustration and photography contributors
  • supplying TI-related supplementary materials for the SCA's websites
The position requires a modest weekly time commitment, except prior to publication deadline when 30+ hours per week may be required.  Qualifications for the Art Director position include expertise with magazine production, the ability to meet deadlines, and experience working with printers.  Applicants need to have access to and experience with a computer running InDesign and the ability to export files to press-quality PDF format (if working on a PC – our printing vendor uses Macintosh, and our existing files are all Macintosh InDesign).  Professional experience in a graphics environment and prior experience in an SCA Chronicler position are desirable, but not required.

E-mail access is absolutely vital to the position, and while high-speed Internet access is not required, it has proven to be very useful.  Reasonable expenses are covered by the Corporation and may include: paper, printer cartridges, stamps, mailing expenses, and a post office box.  You will be asked to submit an expense report, with receipts attached to receive reimbursement.  The Art Director receives a small stipend from the SCA once an issue is complete.

Hard copies of résumés (both professional and SCA related, including offices held and honors) must be sent to the attention of The Board of Directors, SCA, Inc., P.O.  Box 360789, Milpitas, CA 95036-0789.  Electronic courtesy copies should also be sent to resumes@sca.org and pubmanager@sca.org.  

Résumés must be received by April 1, 2016.
